This dish was inspired by the giant zucchini Molly's dad grew in his garden. It was pretty easy and can easily be altered to preference.
Red & Yellow Bell Peppers
Finely chopped all ingredients. Removed the top third of the giant zucchini and removed the inside and cubed for mixture. Cooked onions in olive oil first, then added the zucchini and carrots. After the zuccini and carrots were cooked, added the rest of the ingredients and cooked quinoa. Cook a few more minutes while stirring frequently.
Any number of spices or sauces can work. We kept it simple with salt, pepper, garlic, and some creole spices.
